In a saucepan, combine the balsamic vinegar and the honey and cook over medium heat until reduced by half and the liquid is thickened.
Slice the mozzarella cheese and the tomato into 1/4 inch thick slices.
In a small bowl, combine the salt, the pepper, and the olive oil. Generously coat the chicken breasts with the mixture and then sprinkle with Italian seasoning. Cook the chicken on a medium-heat, greased grill. Cook for 5 to 6 minutes per side or until the internal temperature reaches 165 degrees Fahrenheit when tested with a meat thermometer.
During the last minute of cooking, add one slice of mozzarella and one slice of tomato over each grilled chicken breast. Remove from the grill and top with the balsamic glaze and fresh basil.
