- To make the marinade, add all ingredients into a large Ziploc bag and squeeze with your fingers. Place the chicken pieces into the marinade and place in the refrigerator for 2 hours or overnight.
- Soak the wooden skewers in water for a minimum of 1 hour.
- Place a pieces of bell pepper, red onion, and chicken on each skewer. Place on a preheated grill, over medium to high heat. Keep rotating as they cook, so they do not burn. Drizzle the marinate over the skewers as they cook, coating them. Cook until the chicken is cooked all the way through and vegetables are soft. About 10-12 minutes.
- Serve immediately with flour or corn tortillas and with ranch dressing, if desired. Top with chopped cilantro if desired.
