Grilled Fruit Pizza

Top a grilled flatbread with smoky grilled fresh fruit slices, drizzled in honey and sprinkled with fresh basil or mint.

- Add ricotta, sugar, lemon zest, lemon juice and herbs to a mixing bowl and combine. Set aside in the fridge to stay cool while you prep the fruit.
- Preheat the outdoor grill or cast iron grill pan to medium. Place the flatbread on the grill for a few minutes, flipping once to add grill marks to each side.
- Toss the fruit slices in the honey and melted butter, coating them. Place the fruit slices on the grill and cook for 2-3 minutes, or until you have good grill marks. Remove and place the grilled fruit on a plate or a sheet pan lined with aluminum foil.
- Spread the ricotta mixture on the flatbread. Top with pieces of grilled fruit and drizzle with honey. Sprinkle with fresh basil or mint for garnish if desired. Enjoy immediately.
