- Cut pineapple, orange, and apple 1/2-inch thick each and cut the remaining fruit in half. In large pan combine oil, ginger, salt, and juice of 1 lemon; toss with fruit and second lemon.
- Prepare grill pan or outdoor grill. (If using a grill pan, coat it with spray.) Grill fruit in bunches over medium-high heat until tender (2-4 minutes per side). Take off the heat and arrange on a platter.
- Squeeze grilled lemon over fruit and sprinkle with coconut.
