Grilled Mini Sweet Peppers with Goat Cheese

These pop-able bites are the perfect summer appetizer and delicious to boot. Whip up a batch the next time you fire up the grill and watch them disappear.


Select ingredients:


  1. Preheat your grill to medium-high and arrange the peppers on the grill grate, cut side down. Allow to cook just until peppers begin to soften and grill marks appear, about 5 minutes. Set aside to cool.
  2. Prepare the herbed goat cheese by placing cheese and all herbs in a bowl. Then use a fork or whisk to incorporate the herbs and soften the cheese.
  3. Scoop the herbed goat cheese into the mini peppers and sprinkle with salt to taste. Serve immediately or refrigerate overnight.
