Grilled Mini Sweet Peppers with Goat Cheese

These pop-able bites are the perfect summer appetizer and delicious to boot. Whip up a batch the next time you fire up the grill and watch them disappear.

- Preheat your grill to medium-high and arrange the peppers on the grill grate, cut side down. Allow to cook just until peppers begin to soften and grill marks appear, about 5 minutes. Set aside to cool.
- Prepare the herbed goat cheese by placing cheese and all herbs in a bowl. Then use a fork or whisk to incorporate the herbs and soften the cheese.
- Scoop the herbed goat cheese into the mini peppers and sprinkle with salt to taste. Serve immediately or refrigerate overnight.
