Use your grill for something sweet! Strawberries and blueberries with a golden brown buttermilk crust.
Ingredients
Directions
-
In a large bowl combine the fruit, lemon juice, sugar and tapioca with a spoon. Set aside.
- In another bowl, combine the flour, sugar, salt and baking powder with a fork. Use either a fork or a pastry cutter to cut in the butter pieces. Add the vanilla, eggs, and buttermilk. Stir only until everything is combined thoroughly.
-
Place the fruit mixture into either a 9 x 13 inch baking dish or two 9-inch pie plates. Scoop the topping evenly over the berry mixture. Bake in a preheated 375 grill for about 40-45 minutes. Or until the topping is golden brown and the fruit bubbling. Remove from the grill and let cool for 10-15 minutes before serving. This will allow the fruit to set a little. Serve with vanilla ice cream and whipped cream.
