In this recipe, you’ll be topping perfectly grilled chicken breasts with a combination of fresh chopped peaches, onion, bell peppers, jalapeno, cilantro, lime and seasonings for a flavor-packed main dish. Serve over rice and enjoy with a green vegetable like broccoli or green beans.
- Mix together the chopped peaches, onion, bell pepper, jalapeno, cilantro, lime juice and salt in a medium bowl. Set aside.
- Preheat the grill to medium-high heat. Whisk together the peach preserves, garlic, mustard, salt and pepper in a small bowl.
- Brush the chicken with olive oil and grill for 3-4 minutes on each side. Brush both sides of the chicken with the peach preserves mixture and continue grilling until cooked through, about 4-5 minutes. Top the chicken with the peach salsa and enjoy.
