A light, fresh dessert that peach lovers will devour! The caramel sauce is a spectacular addition to this creamy, delicious dish.

Begin by chopping the walnuts.

Halve the peaches and remove the pits.

Brush the peaches with olive oil.

Grill over medium heat for approximately 5 minutes or until they're warmed and have nice grill marks.

To make the caramel sauce, combine the brown sugar, cream, and butter in a small saucepan and boil for approximately 5 minutes, stirring constantly. Add the vanilla and cook for another couple of minutes.

Serve the peaches with vanilla ice cream; drizzle the caramel sauce over the peaches and ice cream. Garnish with raspberries and mint if desired and top with the chopped walnuts.
