Grilled Peppers and Onions with Feta

This vegetable side dish comes together quickly so you can feed your family a healthy meal in minutes. You can also easily double the recipe for a larger serving.



  1. On a cutting board, cut peppers into strips and quarter the onion.
  2. In a medium-sized mixing bowl, gently toss peppers and onions with olive oil, salt and pepper. Coat well.
  3. If using grill pan: Heat 1 Tbsp. olive oil. Add pepper and onion mixture directly to the pan and sauté on Medium-Low heat for about 10 minutes, or until vegetables slightly begin to char.
  4. If cooking on grill: Use a non-stick vegetable basket, or aluminum foil pouch. Keep on grill for 15 minutes, or until vegetables are soft. Sprinkle cooked vegetables with feta cheese. Serve immediately.
