- In a large bowl, place the onion, tomato, cilantro, lime juice, and the jalapeno pepper. Combine all ingredients. Add salt and pepper to taste.
- Slice the avocados in half, remove the pits, scoop out the flesh, and mash it up.
- Reserve a 1/4 cup of the veggie mixture for garnish. Combine the avocados with the remaining veggie mixture, then add the grilled pineapple chunks and stir.
- Place in a serving dish, top with the remaining fresh veggies and feta cheese. Serve with your favorite tortilla chips.
