- Marinate steaks in olive oil and taco seasoning. Massage olive oil and seasoning into steaks and if possible, place in fridge for an hour before grilling. After the meat has marinated, let it sit for 15 minutes on counter before cooking.
- While steak is grilling, wash and chop tomato, jalapeno, green onion, and mix together into a fresh salsa.
- Squeeze the juice of the lime and grate lime zest into salsa mixture. Place 1 tablespoon olive oil in large shallow pan and cook the tortillas one at a time if possible until crispy. Set aside on paper towel or paper plate to remove excess oil. Chop Romaine lettuce.
- When steak is cooked let rest for a few minutes before slicing. Slice steak into strips and top tortilla, lettuce, cheese, and then spoon fresh salsa on top. Serve immediately.
