Grilled Salmon Steak Medallions

Fancy up your next salmon meal with these attractive and tasty medallions. Add a bit of lemon and enjoy!

  1. In a bowl, combine the soy sauce, the brown sugar, and the canola oil. Mix and set aside.
  2. Start with your deboned salmon steaks. . .
  3. Separate (but do not remove) some of the skin from the meat (go about halfway up one of the legs of the steak as shown). Roll the skinless portion of the leg into the center (as shown).
  4. Roll the other leg in, using the skin flap to complete the circle.
  5. Tie with kitchen twine.
  6. Season both sides of the salmon with kosher salt, lemon pepper, and garlic powder as desired.
  7. Oil and pre-heat your grill to medium-high heat. Place the salmon steaks on the grill and cook for 2 to 3 minutes.
  8. Flip the medallions.
  9. Brush with the soy sauce mixture and cook for an additional 2 to 3 minutes. A meat thermometer should reach 120 degrees Fahrenheit for medium-rare. Flip again if you'd like to add soy sauce to the other side as well.
  10. Serve with fresh chives, lemon wedges, or lemon zest, if desired.
