In 30 minutes or less, you can make this roasted vegetable platter for an appetizer or side item. It's a fresh and healthy dish perfect for spring or summer!
- To make the marinade, combine oil, honey, balsamic vinegar, oregano, garlic powder, salt and pepper in a small bowl and mix together.
- Using a large Ziploc bag, add 3 tablespoons of the marinade and add in vegetables. Seal and shake to coat. At room temperature, let marinate for 1 hour, 30 minutes.
- Place vegetables in to a stainless-steel vegetable basked and grill covered over medium heat for 8 – 12 minutes, turning occasionally.
- Transfer vegetables to your favorite serving dish and pour remaining marinade evenly over top.
