Grilled Watermelon and Avocado Salad

Try grilling watermelon and avocado at your next BBQ for a new twist on summertime favorites. Smoky, sweet and citrus meld perfectly for fresh flavors that perfectly accompany brisket, burgers and dogs and all manner of 4th of July activities.

  1. Preheat the grill on high heat. When the grates are hot, grease them with oil to keep the watermelon and avocado from sticking and place the slices on the grill, leaving the lid open if possible. When grill marks begin to appear, maybe 5 minutes, flip and continue cooking on the other side for another 5 minutes.
  2. When the watermelon and avocado have grill marks on both sides, remove from the heat and allow to cool before slicing both into bit sized pieces and transferring to a serving bowl.
  3. In a separate bowl or cup, whisk together the olive oil, lime juice and zest, mustard, salt and pepper, then just before serving, pour over the watermelon and avocado and toss to coat, adding more salt and pepper to taste. Top with cilantro and serve cold on its own or atop a bed of fresh spinach.
