Ham and Spinach Frittata

A frittata is such a versatile egg dish. Serve it for breakfast, brunch or even dinner. Try using all local grown and organic ingredients


Select ingredients:


  1. In a 10-inch cast iron skillet, over medium, heat the olive oil and butter. Add the diced onions and cook until soft and translucent, about 5 minutes. Add the spinach leaves and cook until they wilt.
  2. Whisk the eggs, milk, salt and pepper. Whisk only enough to blend the egg yolks and the whites.
  3. Preheat the oven to 375 degrees F.
  4. Pour egg mixture into the skillet, sprinkle in the blue cheese, stir and cook until the edges start to pull away from the sides of the pan. About 5 to 7 minutes. Bake at 375 degrees F for 12-15 minutes, or until the eggs are set.
