A frittata is such a versatile egg dish. Serve it for breakfast, brunch or even dinner. Try using all local grown and organic ingredients

- In a 10-inch cast iron skillet, over medium, heat the olive oil and butter. Add the diced onions and cook until soft and translucent, about 5 minutes. Add the spinach leaves and cook until they wilt.
- Whisk the eggs, milk, salt and pepper. Whisk only enough to blend the egg yolks and the whites.
- Preheat the oven to 375 degrees F.
- Pour egg mixture into the skillet, sprinkle in the blue cheese, stir and cook until the edges start to pull away from the sides of the pan. About 5 to 7 minutes. Bake at 375 degrees F for 12-15 minutes, or until the eggs are set.
