Harvest Pasta with Brussel Sprouts & Bacon

Meat lovers will be happy to get all their vegetable in with this hearty fall dish. Brussel sprouts and celery add a crunchy, aromatic twist to an entree rich with spiced sausage and sweet bacon. Plus, this dinner is a cinch to throw together even on a busy weeknight.

  1. Cook pasta according to package directions.
  2. In a large skillet, cook chopped bacon and sausage over medium-high heat, breaking sausage apart as you go.
  3. Once bacon is crispy, add onions and celery and sauté five minutes.
  4. Add chopped brussel sprouts, stirring well to combine. Season with salt and pepper, reduce heat to low and cover for an additional 3-5 minutes, or until sprouts are crisp-tender.
  5. Add cooked pasta to skillet, and toss to combine well.Let simmer for 2 minutes, adjust seasoning to taste.
  6. Serve immediately drizzled with olive oil and Parmesan cheese.
