- Cook the rice per the instructions on the package
- Mix together peaches, mango, shallots, cilantro, jalapeno, lime juice, cumin, salt, and pepper in a large bowl to make the salsa.
- To make each bowls, scoop about 3/4 of a cup of rice into each bowl.
- Top the rice with beans, chicken, and salsa.
- Serve warm.
