Change up taco Tuesday night with healthy taco stuffed peppers. This Mexican recipe is seasoned just right--your family will eat every bite!


Select ingredients:


  1. Preheat oven to 350F.
  2. Slice peppers in half and take the seeds out. Place in large baking dish and cook for 20 minutes.
  3. While peppers are cooking, brown ground beef and onions in pan. Add in drained corn and tomatoes and stir.
  4. Add taco seasoning packet and cook according to package directions. Take peppers out of the oven and add meat mixture to peppers. Top with cheese. Cook for another 15 minutes.
