Change up taco Tuesday night with healthy taco stuffed peppers. This Mexican recipe is seasoned just right--your family will eat every bite!
- Preheat oven to 350F.
- Slice peppers in half and take the seeds out. Place in large baking dish and cook for 20 minutes.
- While peppers are cooking, brown ground beef and onions in pan. Add in drained corn and tomatoes and stir.
- Add taco seasoning packet and cook according to package directions. Take peppers out of the oven and add meat mixture to peppers. Top with cheese. Cook for another 15 minutes.
