Mixed together, this recipe is hearty, yet pillowy with a touch of spice, which makes these Maple Cinnamon Oatmeal Pancakes perfect for the cooler fall and winter months.

- Add 1 cup of oats to a food processor and pulse until coarsely ground.
- Whisk together the ground oats, remaining 1 cup of oats, flour, brown sugar, baking powder, cinnamon and salt in a large bowl.
- Whisk together the buttermilk, eggs, melted butter, maple syrup and vanilla extract in a medium bowl. Pour the mixture into the dry ingredients and whisk until just combined.
- Lightly oil and heat a large nonstick skillet over medium heat. Add several 1/4 cups of batter to the hot skillet and cook until bubbles form; don’t crowd the skillet. Flip the pancakes and cook for an additional 2-3 minutes until cooked through. Remove from the pan and repeat until all the batter is used. Serve the warm pancakes with maple syrup.
Recipe Tip: For an extra treat serve the pancakes topped with sliced bananas and toasted chopped walnuts.
