Select ingredients:


  1. Adjust oven rack to middle position and preheat to 450 degrees.
  2. Mix together garlic, rosemary, thyme. Season roast with salt and pepper then rub herb mixture all over. Place roast on a rack in a roasting pan. Place in the oven and roast for 15 minutes, then reduce heat to 350 degrees and continue to roast until desired doneness - 35 to 40 minutes. Allow to rest for 20 minutes before slicing.
