A simple preparation for a classic roast.
- Adjust oven rack to middle position and preheat to 450 degrees.
- Mix together garlic, rosemary, thyme. Season roast with salt and pepper then rub herb mixture all over. Place roast on a rack in a roasting pan. Place in the oven and roast for 15 minutes, then reduce heat to 350 degrees and continue to roast until desired doneness - 35 to 40 minutes. Allow to rest for 20 minutes before slicing.
