Herb Smashed Red Potatoes

Do you like butter? Do you like potatoes? Do you like the texture of a home-cooked French fry? Then you'll LOVE these delightful potatoes.

- Lightly grease a large baking sheet with canola oil. Place the boiled potatoes on the baking sheet. Using a heavy spatula, flatten each potato until it is approximately ½-inch thick.
- Using a household teaspoon, spoon the melted butter over each smashed potato (be generous).
- Season the potatoes with the salt, pepper, and thyme.
- Bake in a 425-degree oven for approximately 30 minutes. Keep an eye on themâwhen they're golden brown, they're done.
- Remove from the oven, sprinkled the fresh chives on top, and serve.
