  1. Lightly grease a large baking sheet with canola oil. Place the boiled potatoes on the baking sheet. Using a heavy spatula, flatten each potato until it is approximately ½-inch thick.
  2. Using a household teaspoon, spoon the melted butter over each smashed potato (be generous).
  3. Season the potatoes with the salt, pepper, and thyme.
  4. Bake in a 425-degree oven for approximately 30 minutes. Keep an eye on them—when they're golden brown, they're done.
  5. Remove from the oven, sprinkled the fresh chives on top, and serve.
