- Preheat the oven to 400°F. Arrange the cod in a 9x13 baking dish and sprinkle the cherry tomatoes on and around fish.
- Whisk together the melted butter, olive oil, garlic, parsley, thyme, salt and pepper in a small bowl. Brush the fish with the mixture and pour the rest around the fish. Sprinkle with the capers.
- Bake for 15-20 minutes or until the fish flakes easily. Spoon the juices over the fish to serve.
Recipe Tip: Begin checking the fish for doneness at the 15-minute mark. The cod is ready when it’s opaque and easily flakes with a fork.
