- Rinse your hen thoroughly inside and out, discarding giblets if any are included. If there is time, pour half of your salt with water in a Ziplock bag. Add the hen and let it soak in a large bowl in the fridge for an hour before cooking. Pour off the water and dry with paper towels.
- Place the hen in a deep baking dish. Coat it in olive oil, massaging the oil into the skin. In a bowl, mix diced sage and parsley with remaining salt and pepper. Spread the herbs mixture over the hen and bake at 375 degrees for 30 minutes. Watch your hen closely as cooking times may vary.
- Cut your hen in half with a large sharp knife. Place each side on a plate and serve.
