While Christmas dinner is in the oven, your family may start hovering to snag tasty samples to satisfy cravings. Instead, put together a quick and easy meat and cheese snack tray with sliced meats, cheeses, sausage meatballs, marinated vegetables, breadsticks and crackers. Then, set it on the kitchen counter with a few forks and small plates and let your loved ones munch on some savory and delicious bites.

- Preheat oven to 400° and line 2 baking sheets with parchment paper. In a medium bowl, gently mix sausage, breadcrumbs and egg by hand until just combined. Add water slowly and continue mixing. Do not overwork. Spoon 1-inch balls onto one of the baking sheets and set aside.
- In a large bowl, drizzle peppers, carrots, and asparagus with olive oil, salt, pepper and rosemary. Toss to evenly coat and spread across second baking sheet, leaving some room in between vegetables.
- Put both meatballs and vegetables in the oven. Remove meatballs after 16-18 minutes, until cooked throughout. Remove vegetables until soft when pierced with a fork, about 25 minutes.
- On a wooden cutting board or large serving tray, place two small bowls on opposite corners. Fill one with cooked meatballs, and the other with olives. Arrange cheddar slices, brie wedges, pepperoni rolls, salami rolls, prosciutto and marinated vegetables into an attractive pattern around the bowls. Sprinkle almonds randomly throughout. Line the outside of the board with breadsticks and crackers. Use toothpicks to serve where appropriate.
