Directions

  1. Preheat oven to 400° and line 2 baking sheets with parchment paper. In a medium bowl, gently mix sausage, breadcrumbs and egg by hand until just combined. Add water slowly and continue mixing. Do not overwork. Spoon 1-inch balls onto one of the baking sheets and set aside.
  2. In a large bowl, drizzle peppers, carrots, and asparagus with olive oil, salt, pepper and rosemary. Toss to evenly coat and spread across second baking sheet, leaving some room in between vegetables.
  3. Put both meatballs and vegetables in the oven. Remove meatballs after 16-18 minutes, until cooked throughout. Remove vegetables until soft when pierced with a fork, about 25 minutes.
  4. On a wooden cutting board or large serving tray, place two small bowls on opposite corners. Fill one with cooked meatballs, and the other with olives. Arrange cheddar slices, brie wedges, pepperoni rolls, salami rolls, prosciutto and marinated vegetables into an attractive pattern around the bowls. Sprinkle almonds randomly throughout. Line the outside of the board with breadsticks and crackers. Use toothpicks to serve where appropriate.
