Select ingredients:


  1. Adjust oven rack to middle position and preheat to 350 degrees. Place the turkey on a rack in a roasting pan, pat dry with paper towels.
  2. In a sauce pan combine butter, bay leaves, garlic, and peppercorns and place over low heat until melted. Remove from heat and let sit for 15 minutes, then strain and reserve butter.
  3. Season the turkey with salt, then stuff with optional stuffing. Place in the oven, and after 1 hour begin basting with butter. Continue to roast until thickest part of the bird (and the centre of the stuffing, if using) has reached 165 degrees. Remove from oven then let rest for 20 minutes before slicing.
