- In a medium saucepan, add the sugar, salt, honey, and water, and bring to a boil, stirring constantly until the temperature reaches 242 degrees on a candy thermometer.
- Remove from heat, and add the vanilla and the pecans. Stir quickly, place on waxed paper, and separate with a fork.
- Variation: Walnuts or almonds are really good alternatives if you prefer those nuts over pecans.
