These are simply the best! They're easy to make, although you have to be careful, as this candy is very hot! And you have to work fast once you've removed it from the heat. Truly a delight!
- In a medium saucepan, add the sugar, salt, honey, and water, and bring to a boil, stirring constantly until the temperature reaches 242 degrees on a candy thermometer.
- Remove from heat, and add the vanilla and the pecans. Stir quickly, place on waxed paper, and separate with a fork.
- Variation: Walnuts or almonds are really good alternatives if you prefer those nuts over pecans.
