- Preheat the oven to 425°F and adjust the oven rack to the top position. Mix the carrots and 1 tablespoon of oil together in a large bowl until coated. Season with the salt and pepper. Arrange in a single layer on a rimmed baking sheet and bake for 15-20 minutes until tender-crisp.
- Meanwhile, combine the butter, honey and lemon zest in a small bowl. Season with the salt and pepper.
- Preheat the oven to broil. Brush the pork chops with the remaining oil and arrange on the same baking sheet. Season with the salt and pepper. Broil until golden-brown, about 5 minutes. Turn the pork chops over and arrange the green beans in a single layer on the baking sheet. Return the pork chops to the oven and broil until they reach the desired internal temperature, about 4 to 6 minutes.
- Slice the pork chops and serve with the seasoned butter, roasted carrots, green beans and a glass of wine.
Recipe Tip: Substitute the carrots for halved baby red potatoes and bake until tender, about 25-30 minutes!
