Easy Ice box coconut cake
- Mix together first three ingredients. Cover and let set in refrigerator over night.
Next day, bake a yellow cake in a 9 x 13 pan. ( I use butter golden mix.)
Remove from pan, according to package, and allow to cool.
Using a long piece of thread or a bread knife, cut the cake horizontally.
PLace the bottom half back into the pan.
Spoon 1/2 of the coconut mixture onto the cake in the pan and spread evenly to cover.
Place the second half of the cake on top of the filling.
- Spoon the remainder of the coconut mixture onto the cake and spread evenly to cover the cake. Cover the pan and refrigerate for 2-5 days. Note: I us a pan that has its own fitted cover for this.
