Easy Ice box coconut cake


Select ingredients:


  1. Mix together first three ingredients. Cover and let set in refrigerator over night.
  2. Next day, bake a yellow cake in a 9 x 13 pan. ( I use butter golden mix.) Remove from pan, according to package, and allow to cool. Using a long piece of thread or a bread knife, cut the cake horizontally. PLace the bottom half back into the pan.
  3. Spoon 1/2 of the coconut mixture onto the cake in the pan and spread evenly to cover. Place the second half of the cake on top of the filling.
  4. Spoon the remainder of the coconut mixture onto the cake and spread evenly to cover the cake. Cover the pan and refrigerate for 2-5 days. Note: I us a pan that has its own fitted cover for this.
