Iced Apple Bars

Sweet and tart apple bars frosted with a vanilla glaze. Awesome for a snack or a dessert.

Preheat oven to 350°. In a large bowl, combine apples, 1 cup sugar, nutmeg and 1½ teaspoons cinnamon. Toss to coat, set aside.

In a large bowl, combine flour and salt. Cut in butter (with pastry blender or fork) until you see mostly crumbs. Place egg yolk in a measuring cup, then add milk until it reaches 1/3 cup. Pour into flour mixture (slowly). Combine and form dough into a ball.

Split dough in half. Chill one half in refrigerator. Roll the other half into a thin rectangle that will fit your pan. To prevent sticking, sprinkle flour on counter surface and wrap rolling pin in plastic wrap.

Press dough into 9x13 baking pan. Sprinkle crushed cereal on top. Spoon apple mixture on top.

Roll refrigerated dough into a thin rectangle (the size of your pan). Place over apple mixture. Beat egg white with a fork. Brush it on top of dough. Combine 2 tablespoons sugar and 1 teaspoon cinnamon, then sprinkle on top. Bake 50-60 minutes or until golden brown.

For glaze, combine confectioners' sugar, vanilla and remaining milk. Drizzle over pastry while warm. Cool completely, then cut into squares or rectangles.
