Enjoy all of the beloved flavor of Irish soda bread in muffin form for an easy on-the-go treat this St. Patrick's Day.
- In a large bowl, combine the flour, baking soda, salt and sugar and stir together. Add the butter or margarine, cutting it into the dry ingredients with a knife until no large chunks are left. Add the raisins and buttermilk, kneading with your hands until the dough comes together. If it is too dry and crumbly, add 1 tablespoon of milk at a time, just until a single ball of dough forms (it should still be a little crumbly.
- Grease a muffin pan, then pull off hunks of the dough and distribute evenly into the cups. Place the pan in an oven heated to 375 degrees and bake for 35 minutes or until the tops of the muffins are golden brown.
- Allow to cool slightly, then serve warm or at room temperature.
