This is so easy to make and keep eating throughout the week as leftovers. You can sub any veggies you like.
- Cook brown rice, separately. Drain and add into a large mixing bowl. Steam broccoli and add to bowl.
- In the same large bowl, add all remaining ingredients. Mix well. Hot rice and broccoli should melt cheeses. Pour into baking dish.
- Bake at 350 for 30 minutes, or until top begins to brown. Serve immediately. (works well as leftovers - simply reheat and serve)
