- Cream together butter and sugars. Add egg and vanilla.
- In a separate bowl, whisk together flour, baking powder, baking soda and salt. Add mixture to wet ingredient. Knead in color gel. Wrap dough in waxed paper. Place dough in refrigerator to chill for at least 2 hours.
When chilled, roll out half to 1/4-inch thickness. Cut out pumpkins and place on a cookie sheet and bake at 350° for 7 to 9 minutes until baked, but not crisp.
While pumpkin-shaped cookies bake, roll out the remaining dough. Use a 3-inch cutter and place dough over inverted ball shaped pan.
- Chill pan dough in the freeze for several minutes before attempting to bake. Bake at 350° for 7 to 9 minutes until baked but not crisp. Cool before removing from mold then place on rack to finish cooling.
- While cookies cool, prepare frosting. Whip together powdered sugar, shortening, and 2 teaspoons of water. Add more water if necessary to reach desired consistency. Reserve a few teaspoons of frosting for green stems if desired. Add orange gel to the frosting.
Fill the cavity with candy pieces. Coat the edges with the orange frosting. Place cookie over the dome and gently press in place.
Frost cookies with orange frosting. Pipe on green stems if desired.
