Jerk Chicken

Exploding with flavor, you could bake or grill this chicken to juicy, tender perfection.

- Mix all of the following ingredients well using a spoon. If using the habanero powder, wash hands well afterwards and avoid eye contact.
- This will create more than enough seasoning mix for the recipe. Place unused mix in an airtight container for long-term storage. It is excellent on pork, chicken and turkey.

Take between 10-12 assorted pieces of bone-in chicken and pat dry with paper towels. Score thicker pieces, such as thighs and breasts with a small knife to allow the mix to penetrate the meat. Apply generously to all sides. Again, use a spoon and be sure to wash hands well afterwards if the habanero powder was used. Allow the rub to sit on the meat for at least 15 minutes.

Place into a pre-heated grill or oven (350 degrees). Flip/rotate the pieces halfway through the cooking time. Cook for 25-30 minutes.

The brown sugar will turn black, especially if cooked in a grill. This is normal.
