Exploding with flavor, you could bake or grill this chicken to juicy, tender perfection.

Select ingredients:

  1. Mix all of the following ingredients well using a spoon. If using the habanero powder, wash hands well afterwards and avoid eye contact.
  2. This will create more than enough seasoning mix for the recipe. Place unused mix in an airtight container for long-term storage. It is excellent on pork, chicken and turkey.
  3. Take between 10-12 assorted pieces of bone-in chicken and pat dry with paper towels. Score thicker pieces, such as thighs and breasts with a small knife to allow the mix to penetrate the meat. Apply generously to all sides. Again, use a spoon and be sure to wash hands well afterwards if the habanero powder was used. Allow the rub to sit on the meat for at least 15 minutes.
  4. Place into a pre-heated grill or oven (350 degrees). Flip/rotate the pieces halfway through the cooking time. Cook for 25-30 minutes.
  5. The brown sugar will turn black, especially if cooked in a grill. This is normal.
