Prepare oatmeal to as packaged.
Heat a large skillet over medium-high and cook the bacon until crisp, approximately 10-15 minutes. Drain, reserving the bacon drippings.
Heat 3 tablespoons of bacon drippings, in the same skillet, over high. Cook the onions until translucent, about 5 minutes. Stir in the beans, tomato and corn. Heat for an additional 3 minutes and add the fajita seasoning and bacon. Keep on the heat for an additional 2 minutes (add bacon grease one tablespoon at a time, if the mixture becomes dry).
- Serve bacon mixture over warm oatmeal and top with cheddar cheese.
