Kathy's Sweet Coleslaw

This is my own mash up of several coleslaw recipes - the result is fantastic, sweet and low-fat. Speed things up with a Cuisinart for the grating parts. Substitute green cabbage for red or go half-and-half for a colorful side dish. Combined, cabbage and carrots should be about five cups of slaw.


Select ingredients:


  1. Gather your vegetable ingredients and grate the red cabbage, carrots and radishes in a Cuisinart mixer.
  2. By hand, chop the green pepper, onion and parsley and add to the mix. Toss with grated ingredients and set aside.
  3. In a small bowl, mix your dressing, adding the oils, then the dry ingredients and stirring till blended.
  4. Pour dressing over vegetable mixture and toss.
