- In a large cast-iron skillet or pan, fry bacon over medium-high heat until crispy. Drain on paper towels and reduce heat to medium.
- Add Brussels sprouts to the pan and coat with bacon fat. Season with salt and pepper and cook, stirring frequently, for 10-12 minutes, or until sprouts are soft when pierced with a fork. Add bacon back to the pan.
- Remove from heat and toss gently with balsamic vinegar and Parmesan cheese. Serve warm.
