- In a stand mixer, beat 3 cups of heavy cream and vanilla on high until stiff peaks form.
In a separate bowl, combine condensed milk, lime juice and zest. Gently fold whipped cream mixture into condensed milk.
Line a 9-inch springform pan with plastic wrap. Place a layer of vanilla wafers in the bottom of the pan. Top with a layer of the cream mixture, making sure to spread all the way to the edges.
Repeat layers, ending with cream. Cover with plastic wrap and chill overnight.
