Kielbasa, also called Polish sausage, may be smoked or unsmoked, and either works well in this recipe. Be sure to select precooked kielbasa for speedy preparation of this one-dish family meal, which is perfect for a busy weeknight.

Select ingredients:

  1. Heat the olive oil in a large pan over medium heat. Add the kielbasa, potatoes, onion, and bell pepper. Cook, stirring occasionally, for 5 minutes, or until the kielbasa and potatoes are lightly browned.
  2. Stir in the water, peas, corn, oregano, thyme, salt, and pepper. Increase the heat to medium-high. When the liquid comes to a boil, reduce the heat to low. Cover and simmer for about 5 minutes, or until the potatoes are tender. Taste and adjust the seasoning.
  3. Top each serving with 1/4 cup shredded cheese and garnish with pepper.
