Kielbasa and Potato Skillet

Kielbasa, also called Polish sausage, may be smoked or unsmoked, and either works well in this recipe. Be sure to select precooked kielbasa for speedy preparation of this one-dish family meal, which is perfect for a busy weeknight.

- Heat the olive oil in a large pan over medium heat. Add the kielbasa, potatoes, onion, and bell pepper. Cook, stirring occasionally, for 5 minutes, or until the kielbasa and potatoes are lightly browned.
- Stir in the water, peas, corn, oregano, thyme, salt, and pepper. Increase the heat to medium-high. When the liquid comes to a boil, reduce the heat to low. Cover and simmer for about 5 minutes, or until the potatoes are tender. Taste and adjust the seasoning.
- Top each serving with 1/4 cup shredded cheese and garnish with pepper.
