Simple and delicious lamb chops with garlic, fresh rosemary and a apple cider reduction will make your dinner perfect.

- Remove the lamb chops from the refrigerator and let them warm up to room temperature. Season the lamb chops well with salt and black pepper.
- In a large skillet, over medium to high heat, melt the butter and olive oil. Once it is very hot, almost smoking, add the lamb chops and brown on both sides. About 3-4 minutes each side. (medium rare)
- Preheat the oven to 375 degrees F. Once both sides are browned, remove the lamb chops and place on a sheet pan or shallow baking pan. Keep the lamb chops warm in the oven, while you prepare the glaze.
- Add the chopped garlic and rosemary to the hot oil in the skillet. Turn the heat down to medium. Use a wooden spoon to stir the garlic and rosemary, making sure it does not burn.
- Add the apple cider and cornstarch and whisk until it becomes slightly thickened. Spoon over the lamb chops and serve immediately.
