Leftover Mash Blue Cheese Bites

The key to making these little leftover mashed potato gems stand out is height and a mini-muffin pan. You can use a regular muffin pan, but then the end result is more of a side dish portion. These mashed potato bites call for blue cheese, but you can switch out the blue for your choice. Here' s a tip: less expensive blue cheese crumbles are usually the least flavorful, and that' s what you want for these bites. Don't select a blue cheese that' s too pungent or it will drown out the potato and fresh herb flavors. What you want is just a hint of blue in every bite.

- Preheat oven to 375 degrees. In a mixing bowl, combine all ingredients - except half the chives and blue cheese - into a large mixing bowl. Mix slightly so potatoes and cheese remain chunky.
- Grease muffin tin with butter and spoon mixture into each cup. Bake until center potato bite is warm.
- Then, sprinkle remaining blue cheese and broil bites until slightly golden.
- Garnish with chives and serve on little spoons as an appetizer or serve multiple bites as a side dish.
