Everyone wonders what to do with leftover pot roast, especially after you've been eating it for a couple of days. In the winter months this recipe for hearty beef barley soup can't miss. And make sure not to throw out that gravy it will come in handy and make this soup all the more flavorful. A bonus: this may be the easiest soup you' ll ever make!


Select ingredients:


  1. In a large soup pot, combine all ingredients except pot roast and bring to a simmer.
  2. Stir in leftover pot roast.
  3. Continue to cook until soup thickens.
  4. Spoon into large bowls and serve with dinner rolls and sweet cream salted butter.
