Everyone wonders what to do with leftover pot roast, especially after you've been eating it for a couple of days. In the winter months this recipe for hearty beef barley soup can't miss. And make sure not to throw out that gravy€“ it will come in handy and make this soup all the more flavorful. A bonus: this may be the easiest soup you'€™ll ever make!


Select ingredients:


  1. In a large soup pot, combine all ingredients except pot roast and bring to a simmer.
  2. Stir in leftover pot roast.
  3. Continue to cook until soup thickens.
  4. Spoon into large bowls and serve with dinner rolls and sweet cream salted butter.
