Stretch your leftovers and your budget with this filling, hearty and cost-conscious chowder! It feeds eight and freezes well, making it a great way to feed your family several times while putting the items you purchased for Thanksgiving to good use.

- Heat the olive oil in a large pot over medium heat. Add the onion, carrots and celery and cook for 5-7 minutes or until softened.
- Add the potatoes and turkey to the pot and cook for 1 minute. Season with Italian seasoning, plus salt and pepper to taste. Add both cans of corn, chicken broth and milk. Bring to a boil, reduce heat and simmer for 15-20 minutes, stirring occasionally. Divide into bowls to serve.
Substitute: Feel free to substitute leftover ham, rotisserie chicken or shrimp for the turkey for a delicious variation. Or for a vegetarian option, substitute with 2 (15 oz.) cans of your favorite beans.
