Leftover Turkey Havarti with Cranberry Mayo

What could be better than discovering a new way to use a Thanksgiving leftover? One dish that incorporates two Thanksgiving leftovers, of course! This irresistible combo of leftover turkey and leftover cranberry sauce will have your friends and family looking forward to the day after Thanksgiving as much as the actual holiday. Paired with slices of Havarti cheese (with dill, if available) and homemade cranberry mayo, these sandwiches will be gone as soon as they hit the plate. Tip: for the carb-conscious diner, these also make great wraps. Try with spinach wraps for extra flavor.

  1. In a bowl, mix cranberry sauce and salt. Then, mix in mayo and stir until creamy.
  2. Slice bread into halves and liberally spread cranberry mayo on each side. Layer spinach on one side and turkey on the other to help both adhere to the sandwich. Grind fresh pepper atop the turkey.
  3. Place one slice of cheese on each side.
  4. Assemble sandwich and enjoy. For hot sandwiches, broil open-faced with cheese facing up before assembly.
