Leftover Turkey Noodle Casserole

Put your leftover turkey to great use this year with a casserole dish that combines turkey, pasta and mixed vegetables in a cheesy mushroom soup blend topped with Ritz cracker crumbs for an added crunch.


Select ingredients:


  1. In a large pan, heat the butter over medium heat. Add the onion pieces and cook until translucent. Add the flour and stir with a wooden spoon, for about 1 minute. Gradually add the milk and combine. Stir in the can of condensed soup, mustard, salt and pepper.
  2. Cook for 6-8 minutes, or until slightly thickened. Remove from the heat and add the shredded cheese.
  3. Preheat the oven to 350 degrees F. Toss the cooked pasta and cheese sauce, along with the mixed vegetables, and turkey. Add a little pasta water if needed to thin the sauce.
  4. Transfer into a greased baking dish. Sprinkle with Ritz cracker crumbs and bake in the preheated oven for about 30-35 minutes. Or until thoroughly heated. Serve immediately.
