Leftover Turkey Noodle Casserole

Put your leftover turkey to great use this year with a casserole dish that combines turkey, pasta and mixed vegetables in a cheesy mushroom soup blend topped with Ritz cracker crumbs for an added crunch.

- In a large pan, heat the butter over medium heat. Add the onion pieces and cook until translucent. Add the flour and stir with a wooden spoon, for about 1 minute. Gradually add the milk and combine. Stir in the can of condensed soup, mustard, salt and pepper.
- Cook for 6-8 minutes, or until slightly thickened. Remove from the heat and add the shredded cheese.
- Preheat the oven to 350 degrees F. Toss the cooked pasta and cheese sauce, along with the mixed vegetables, and turkey. Add a little pasta water if needed to thin the sauce.
- Transfer into a greased baking dish. Sprinkle with Ritz cracker crumbs and bake in the preheated oven for about 30-35 minutes. Or until thoroughly heated. Serve immediately.
