In many families, there is always leftover turkey to look forward to the day after Thanksgiving. Some heat it up and enjoy it the same way as they did for dinner. Some make simple sandwiches on slider buns. But if you want to try something a little different, this Turkey Salad Sandwich recipe is a fantastic choice. The turkey salad is a creamy combination of mayonnaise, mustard, celery, green onions, almonds, salt & pepper and turkey, of course! You’ll also enjoy fresh lettuce and cranberry relish or sauce in eat bite of your croissant sandwich.

- Mix the mayonnaise, mustard, salt and pepper in a medium bowl. Add the turkey, celery, onions and almonds and mix to combine.
- Split the croissants in half horizontally. Spread 2 tablespoons of the cranberry relish over the bottom half of each croissant. Top with a leaf of lettuce.
- Evenly divide the turkey salad between each sandwich and finish with the top half of the croissant.
Recipe Tip: Some delicious options include replacing the almonds with pecans and/or adding diced apples or grapes to the turkey salad.
