Whether you’re at your favorite park, on the beach or just sitting on a blanket in the backyard, picnics are a lovely and low-cost way to soak up the summer sun. The best kind of food for the occasion is something portable and crowd-pleasing that’s easy to pack and easy to serve. This lemon chicken pasta salad — full of garden veggies, a bright dressing and a handful of fresh herbs — gets it just right, at a low price.

  1. Whisk together the lemon juice, vinegar, garlic, oregano, salt and pepper in a small bowl. Slowly drizzle in the olive oil while whisking constantly until combined.
  2. Bring a large pot of water to a boil. Cook the pasta according to package directions; drain and rinse with cold water. Transfer to a large mixing bowl.
  3. Add the chicken, spinach, cucumber, tomatoes, green olives and parsley to the bowl. Pour the lemon vinaigrette over the salad and gently toss to combine. Portion into plastic serving cups and serve immediately or refrigerate until ready to enjoy.

Recipe Tip: If making the pasta salad ahead of time, reserve 1/3 of the dressing to toss just before serving."
