Savor your grilled lemon pepper chicken leftovers in these chicken and pepper burritos, loaded with cheese, rice, onions and sour cream.


Select ingredients:


  1. In a large skillet over medium heat, add the butter and oil. Add the slices of peppers and onions once the oil is hot and cook until softened. Stir occasionally with a wooden spoon so they do not burn. Season generously with salt and pepper. Add the honey towards the end of the cooking process. Stir to combine.
  2. Spread a thin layer of sour cream on each tortilla and sprinkle with cheese. Divide shredded chicken, peppers and onion mixture, and rice and beans among warm tortillas. Fold in bottom and sides of tortilla and roll up. Serve immediately.
