This hearty soup is perfect for cool winter nights. And since it takes less than 30 minutes to prepare, it will have you feeling cozy and nourished in no time flat.


Select ingredients:


  1. If using an instant pot or electric pressure cooker, combine all ingredients in pot, secure lid, and cook on high pressure for 10 minutes. Alternatively, Combine all ingredients in a large pot, bring to a boil, then reduce to a simmer for 15 minutes or until veggies are soft.
  2. Remove the bay leaf and parsley sprigs and, using an immersion blender, puree about half the pot if you desire a thicker soup. Top with additional fresh parsley and serve hot.
