Filled with five different fresh vegetables and a layer of cilantro lime hummus, this recipe for Rainbow Veggie Wraps is perfect for a light lunch that’s packed with fresh flavor. Make them the night before and store in the refrigerator so they’re ready for you and your family to enjoy the next day. If you want to add a little deli meat, make sure to visit your local Food Lion’s Deli department and get some fresh-sliced turkey or chicken. Either one would taste great rolled up in this wrap.

- Make the cilantro lime hummus by folding the lime juice and zest and cilantro into the classic hummus in a medium-size bowl. On each spinach tortilla, spread 1/4 cup of hummus and then layer with baby spinach.
- Create distinct colorful layers on each wrap by placing the carrots, peppers, cabbage and onions side-by-side, all running in the same direction.
- Roll tightly and refrigerate until ready to serve. Cut each wrap in half for lunch or cut into pinwheels for an afternoon snack to share with your family.
